Chocolate Mocha

This rich, creamy, thick chocolate custard is made from raw cashews. It has a lovely taste and would make an elegant ending to a special dinner. It is easy to make and will surprise and please your guests with its complex, rich taste and smooth mouth-feel. This is truly one of my all-time favorite recipes! 

Chocolate Mocha Custard
1 cup raw cashews
2 cups water
½ cup Kaluah liquor
2 teaspoons vanilla
½ cup cocoa powder
1-2 tablespoons (decaf) instant coffee crystals (to taste)
½ cup maple syrup
Pinch salt

Place cashews in blender and blend several minutes.  Add other ingredients and blend until fully liquefied. Place mixture in pot on top of a heat diffuser (or flame tamer).  Bring to a slow boil, and then turn down heat.  Whisk until mixture reduces 1”.  When mixture coats the back of a spoon, it is ready to place into serving dishes. Distribute custard into four to six serving bowls and refrigerate 2-4 hours.
