This recipe is easy to make and takes just minutes to whip up and bake. Fill plastic bags with the dry ingredients and then add the wet ingredients when you want to bake to speed up the process even more. These muffins use teff flour — full of protein, and sucanut — a natural brown sugar. If you don’t have these on hand, no problem. Just substitute the teff flour with another high protein flour like garbanzo bean or gafava (a combination of garbanzo and fava bean flour). You could also substitute with quinoa flour.
